As has been our tradition ever since Ron was called as Stake President, we held our annual Stake Presidency Christmas Dinner at our home last night. Since our new Arlington stake was recently created from a division with the Marysville Stake, (and Ron was called as the new Arlington Stake President) it has been a busy two months trying to get the new stake staffed and trained. We felt that our Christmas Dinner was a wonderful tradition to continue, as it allows us to associate with one another on a less formal basis, and get to know one another better.

Our dinner consisted of: Salmon, tossed green salad, homemade rolls, asparagus, Italian spiced potatoes, Raspberry/Cranberry set salad and Paper Sack Apple pie with Vanilla Ice Cream for dessert.
Paper Sack Pie
Crust
1 ½ cup flour
½ cup oil
1 ½ tsp sugar
1 tsp salt
2 Tb. Cold milk
Filling
4 cups (large bowl full!) sliced apples (or peaches)
½ cup sugar
2 plus Tb. Tapioca
1 Tb. Cinnamon
Mix and Sprinkle on Top of Filling
½ cup flour
½ cup sugar
1 cube butter
Pat crust into pie tin using fingers….shape to fit pie pan. Pour in apple filling…press down with hands to keep filling firmly in place: it will be a high mound of apples. Then sprinkle topping on top of apples….you may need to pat down a bit to keep it from rolling off the top of the mound of apples.
Gently slide pie into paper sack which is lying on it’s side, and then staple shut. Bake at 350 degrees for 1 ½ hours.
